Why freeze-dry coffee & tea

The process starts from a brewed, concentrated extract that is frozen solid, then dried under vacuum so the ice sublimates straight to vapour without melting. Removing roughly 95-98% of the water at low temperature keeps the aromatic and flavour compounds locked in, rather than driving them off with heat as spray-drying does.

The dried extract is broken into the familiar glassy granules, which dissolve cleanly in hot or cold water. Because the structure is porous, reconstitution is fast and complete, giving an instant cup that carries the aroma of the source brew.

What to consider

Coffee and tea are processed as liquid extracts, so the upstream brewing and concentration steps matter as much as the dryer itself: a higher-solids extract shortens the cycle, while freezing rate shapes the granule and its colour. Aroma management during and after drying is the defining quality factor for the finished product.
