Fast, hard pre-freezing is half of a good freeze-dried product. A blast freezer drops product to about −30 to −40 °C quickly, forming small ice crystals that protect cell structure and give better colour, texture and rehydration than slow freezing. It also frees your dryer to sublimate rather than spend hours freezing on-shelf — lifting throughput.

It blast-freezes up to 38 kg per cycle. Match the blast freezer roughly to your dryer's batch load so one pre-freeze run fills one drying batch. If you run several dryers or large batches, size up — pre-freezing should never be the bottleneck.
